So, for the 2nd time in 3 months I have won the Athens Make It Fancy With Phyllo Contest! And, as karma would have it, I came home from the market with…yup, 5 boxes of Athens Mini Fillo Shells…and was literally juggling them with my left hand while opening the mailbox containing the congratulatory letter and check with my right! Come to think of it, my BLT Casserole, the one that was the highest scoring casserole at last year’s World Food Championships, also had Phyllo in it. Dang, I think I’m gonna use that stuff in ALL my recipes from now on!!! OK, off to the kitchen. I think it’s gonna have to be scrambled eggs and bacon wrapped in phyllo for breakfast.

“I Made It Myself” Chicken Salad Cups

Monthly Winner – Mini Fillo Shells Make It Fancy and Fun Recipe Contest

INGREDIENTS:

1 box ATHENS Mini Fillo Shells
1 cup pre cooked, shredded chicken breast
1/2 cup Mayo
1 teaspoon chopped chives
1/2 teaspoon chipped tarragon
1/4 cup green seedless grapes, sliced
1/4 cup chopped almonds
1 tablespoon chopped, crunchy bacon

INSTRUCTIONS:

With all the ingredients already cooked and chopped by Mom, (whom you’ve been REALLY nice to!) all you need to do is toss everything but the Athens Mini Fillo Shells in a bowl and mix it up. Then stuff the shells and wow your friends with your culinary skills! But remember to clean up after yourself to insure that Mom keeps inviting you into the kitchen.
